Physician Hyman (The Blood Sugar Solution) pairs his earlier Eat Fat, Get Thin with over 175 mouth-watering and health-savvy recipes. Hyman, director of the Cleveland Clinic Center for Functional Medicine, debunks commonly held ideas about consuming fat. He cites new research suggesting that it does not cause obesity and heart disease; carbs do. Hyman asserts that consumption of olive and coconut oils, avocados, wild fatty fish, nuts, and seeds will reduce inflammation and boost energy, and, when combined with a low-glycemic and whole-food diet, can contribute to weight loss and even, he says, reverse type 2 diabetes. With the help of chef Frank Giglio, Hyman introduces sustaining and delectable recipes, including poached eggs with Hollandaise, taco salad, roasted cauliflower soup, and shrimp scampi. After a strict 21-day starter plan (which Hyman supplements with tips on maximizing fats, eating well on a budget, dining out and with kids, and saving time), Hyman recommends transitioning to a "Pegan" diet combining the best aspects of paleo and vegan diets. Hyman has dedicated his medical career to weight-loss regimens that focus not merely on low-calorie foods (the Blood-Sugar Solution series). His goal for successful dieting concentrates on eliminating sugars, particularly refined ones, and most carbohydrates, especially those found in gluten-bearing cereal grains. He also bans most dairy products, citing them as particularly laden with antibiotics and hormones deleterious to good health. Fruits, except for berries and a few others, pump the body full of too many simple sugars that cause blood-sugar levels to spike. Hyman advocates consumption of fats, but mostly nut-derived ones, never refined grain-based oils. The key for this diet's success is to follow it strictly for an initial three-week interval. Regular exercise also plays a central role in this regimen and in sustaining a generally healthy lifestyle.
