Hi. I'm Maria Hesse. I'm a personal chef, sustainable lifestyle designer, and writer living in San Diego, CA. If there is one thing that I want you to know about me, it's that I understand the full spectrum of challenges that we face as individuals when it comes to making healthy lifestyle choices. I was once someone who thought that being on a healthy diet meant Slim Fast shakes for breakfast and lunch, and Lean Cuisine for dinner. (Agh, gag me with shame, humiliation, and the thought of ingesting such toxic substances ever again.) As a student in design school, I developed a passion for the industrial side of sustainability. This translates into smart-home technology, expensive finishes and fixtures, and the ultimate standard of sustainability -- LEED certification. As much as I admired these elements of design, I realized that having all of these things didn't necessarily translate to reducing an individuals' impact on the environment. That's when I decided to challenge myself by going vegan for a year. In that time frame I learned that not only was I effectively reducing my impact on the environment, I was effectively reducing the impact of the environment on my health. Newton's third Law of Motion states that for every action in nature, there is an equal and opposite reaction. The same can be said for food. When you eat processed junk that has been stripped and deprived of nutrients and minerals, the equal and opposite reaction is excessive waste and poor health. When you eat a diet rich in nutritive vegetables and fruits, you reduce waste and improve health. This is the mantra I cook with, and it's what you will find in our e-cookbook, 'The Intentionalist Cooks'.Shanna and I wrote these simple recipes in her tiny, romantic kitchen over the span of my time cooking for her. There was always a sweet French bulldog named Hamlet looking up at me for carrot scraps, and the beautiful San Diego sun filtering in through the window over the sink. The space was 80 square feet of pure inspiration. There is no greater or rewarding challenge as a chef than developing delicious, colorful, and flavorful satisfying dishes. Top that accomplishment off with the fact that these recipes are also vegan, free of refined sweeteners, absent of tofu, and gluten-free... and well, I think we deserve a pat on the back.
