Emily Lui is one half of the Lui Sisters, co-founders of London's all-natural bakery Cutter & Squidge.Emily continues her career as a lawyer and a Partner in a London Law Firm, she decided to start Cutter and Squidge with her sister as an outlet to exhibit her creativity, love and passion for home made natural baking.Emily has a love of taking familiar much loved flavours emphasising them with the use of natural quality ingredients and adding modern twists resulting in comforting but interesting creations.Back when the sisters were plotting to make their mark on London's baking scene and perfecting their 'Biskies' in their tiny kitchen, Annabel would cut them and Emily would "squidge" them together... and that's how Cutter & Squidge came about!Drawn to natural, high quality ingredients, inventive ideas and fresh, full-on flavours, the sister's did some research and found the market lacking, with the popular brands only selling very sweet cupcakes. An intense time followed where they turned their own kitchen into a late-night laboratory, baking up a storm until the early hours before heading back to work for those long corporate days.After a selling out at Chelsea Farmers Market within an hour back in 2013, being signed up by both Selfridges and Harrods, and a dizzying life of office jobs by day and bakers by night, the sister's reached their proudest moment in 2015: opening the doors to the first permanent Cutter & Squidge store in the heart of Soho. Since then they have opened 2 more stores, and have supplied cakes for brands all over London, as well as building up a loyal Cutter & Squidge community.
