About the Author

Adrian Davila

Adrian Davila is a third generation barbecue restaurateur, chef and pitmaster at the acclaimed Davila's BBQ in Seguin, TX. His grandfather, Raul Davila, opened Davila's in 1959, more than a half-century ago, and passed on the secrets of his smoked BBQ to Adrian's father, Edward Davila. The Davilas are deeply proud of their Mexican-American roots and their family tradition of creating the best barbecue in Texas.

Adrian credits his grandfather and father with teaching him the value of hard work. Most of his youth was spent in the kitchens of the restaurant, learning all of the special techniques until he could prepare everything on the menu to perfection. Adrian still practices those skills today and has since created his own unique barbecue recipes for the restaurant as well as the family's extensive catering business. He continues to expand his culinary knowledge and skills through research and travel, most recently throughout Europe, with a special stop in the city from which his family once hailed, Avila, Spain.

Now, with author added to his resume, Adrian has been able to tell his family's story through several different mediums. Through the cookbook Adrian really connected with his roots and did a deep dive into why Davila's BBQ does things the way they do (and have for generations) . At Davila's BBQ, Adrian serves as the restaurant spokesperson and was featured as a judge on the Travel Channel's show American Grilled, as a contestant (and first-place winner) on the Food Network show BBQ Blitz "Texas Takedown," as a guest chef on the Food Network's The Kitchen and as a judge on the Food Network's BBQ Kids Champion. He has also appeared on KSAT 12's SA Live, WOAI News 4's San Antonio Living and KENS-5's Great Day SA. Adrian also is frequently featured in publications, including Readers Digest, the San Antonio Express-News, MySA, SanAntonio Edible Magazine and the Seguin "Sizzle" Gazette.
