Heidi Gibson (1972-) is the Commander In Cheese of The American Grilled Cheese Kitchen in San Francisco. She is a self-taught cook and got into the grilled cheese business after winning grilled cheese contests as a hobby for many years. "Grilled Cheese Kitchen" is her first cookbook but there's more to come. She lives in the Bay Area with her husband and co-owner of the restaurants, Nate Pollak, and their two amazing rescue dogs.
